The anchovies of SERRATS have perfectly clean the head, the spine and the guts. Anchovies are macerated in vinegar for 36 hours. Later they are tinned covering them with the traditional vinaigrette recipe.
The result, exquisite white anchovies that stand to have a smooth texture and the right hardness.
